Agave nectar may be the world’s most perfect sweetener. Use 1/3 Cup Agave to replace 1 Cup white sugar. Agave is flavor neutral itself. Agave also amplifies other recipe flavors, while sugar attenuates or short circuits other flavors. You’ll immediately notice how subtle flavors in your recipes “jump out” with greatest intensity.

Agave’s rich density of saponins increases hydration as the soapy, surfectant nature of saponins change the wetting angle of water it contacts. This eases and accelerates cellular water uptake, especially when used with a high-quality salt.

Agave also has extremely low glycemic action. Simplified, glycemic index is the measure of enzymes any food requires for it’s sugar components to be digested. Lower glycemic index foods require less digestive enzymes. This redirects pancreatic enzymes to tissue regeneration, immune function and longevity rather than digestion.

Agave resists and defers the majority of it’s digestion until the lower intestine, where white sugar and alcohol are both primarily digested/absorbed in the stomach.
